Tonight I wanted to share with you a really quick, simple, and very healthy alternative to one of my favorite breakfast foods: PANCAKES!
One morning I asked my husband if he wanted pancakes for breakfast but he mentioned that he wanted to try something healthy. I jumped on Pinterest and found this awesome recipe for healthy Banana pancakes.
This pancake recipe consists of just two ingredients, yes I said TWO!
The biggest disclaimer I can give you about this recipe is that if you are not a fan of bananas you may want to try adding different things like: vanilla extract, cinnamon, or even chocolate chips.
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 6 mini pancakes; or 4 regular size pancakes
1. Using a fork, mash banana into a bowl. Tip: I found that cutting the banana into slices than mashing was a lot easier
2. Mix 2 eggs into the mashed banana and whisk together
3. Pour the batter into a well oiled pan. At this point you can make the pancakes as big or as small as you would like. The smaller the pancake the easier they will be to flip.
4. The last and final step is to add your favorite toppings and enjoy! My husband and I loved this healthy pancake recipe and will definitely be making them in the future.
